Roasted pumpkin ravioli, sweated shallots, grated parmesan, chopped sage and plenty of salt and pepper. Often this type of pasta has macaroons or nuts in the filling, but I decided to experiment by moving the latter in the sauce, the presentation of the ingredients provided in unexpected ways can be a pleasant surprise.
